I cant think of a better way to celebrate my first post than with breakfast. My favourite meal of the day and the most important! I love going out to a cafe and indulging in a delicious breakfast or staying in and lounging around eating brunch at home. On busy days when I have to be at work early I need something to grab and go & this granola is a life saver. It’s so easy to make a batch on Sunday and have breakfast sorted for the rest of the week. Unless you’re like me and eat it straight off the tray in all its toasty glory. It’s also amazing just as a snack. I often catch my partner, Michael, eating it out of the jar! The chewy chocolatey chucks are such a treat it’s too hard to resist.
I love making my own granola because it’s so much better for you. Store bought granolas are typically loaded with sugar and other hidden nasties. For this granola I’ve used oats as a base & bulked it out with almonds + hazelnuts + sunflower seeds for protein, Healthy fats & fibre to power you through your morning (or afternoon) and sweetened it with bananas + honey. Best of all you get a bonus crunch from the buckwheat & an antioxidant boost from the cacao. The perfect nourishing breakfast.
Chewy Choc Chunk Granola
makes about 700g / 6 cups Prep – 10 min Cooking – 40 min Difficulty – EASY
3 cups oats
1 cup almonds
1 cup hazelnuts
1/2 cup buckwheat
1/2 cup sunflower seeds
1/4 cup cacao nibs
3 Tablespoons coconut oil
3 Tablespoons honey
3 Tablespoons cacao
1 Tablespoons cinnamon
Start by preheating your oven to 160C.
In a large mixing bowl add all the dry ingredients & mix evenly.
In a separate bowl mash the bananas.
Add all the remaining wet ingredients to a saucepan melt over a low heat to a smooth liquid.
Add the mashed bananas & melted wet mix to the oats. Mix so everything is well coated and there are no dry pockets.
Line 1-2 large baking tray’s with baking paper and spread the wet granola mix out in one layer. The thicker your granola layer is the more moist and chewy it will be. So if you like to live on the crunchier side of life spread it a bit thinner.
Bake for 30 – 40 minutes.
This is probably the most important step! DO NOT stir the granola while it’s baking. Leaving it in one flat piece is how you form the deliciously chewy chunks. If it starts to brown too much on the edges just turn the temperature down a notch.
When the granola is golden brown & crisp on the outside remove from the oven and allow to cool completely on the tray.
Break into chunks as big or small as you like. Store in an airtight container in the pantry for up to a month.
I love to serve mine with berries, almond milk & coconut yoghurt but any toppings will do.
