Superfood Bircher Muesli

Working in a cafe means I don’t have a lot of time in the morning to make a full on breakfast. I’m usually up at 5am and out the door by 5 30am so I need a great grab and go breakfast that requires no effort what so ever. This bircher is great when you have a busy week or early starts. Its a breeze to throw together, it lasts for up to a week in the fridge and you can vary the ingredients depending on whats in season. I make a big batch the night before I go back to work then portion it out into takeaway containers. That way I know I have a nourishing meal to start the day with.

This recipe is a play on classic apple pie flavours using grated apples, warming cinnamon, sweet raisins and oats soaked in almond milk until everything becomes deliciously creamy.  You can really use whatever fruit you like and then add in nuts, seeds and spices to bump up the nutritional value. I love to add chia seeds to the mix and then top the bircher with some crunchy granola or fresh fruit if I have time. Adding a sweetener like honey in is optional. I find if I add lots of fresh or dried fruit they naturally sweeten the bircher. Feel free to mix and match and create whatever your feeling.

Superfood Bircher Muesli
Serves – 2    Prep – 10 min     Difficulty – easy

Ingredients
2 cups of gluten-free or organic oats
1 1/2 cups of plant milk
1 – green apple, grated
1/2 cup raisins
1 cup of nuts and seeds (almonds, chia, flax, walnuts, sesame )
1 tablespoon of cinnamon
1 tablespoon honey or maple syrup

To serve
fresh fruit or berries
coconut yoghurt
superfood extras like bee pollen, cacao nibs, coconut flakes, granola.

Method
Add all the ingredients to a large bowl and mix until combined. Portion the bircher into small takeaway containers and let set in the fridge overnight or for at least 1 hour. This is just so the oats soak up the liquid and become deliciously creamy. To serve top with your favourite fruit and coconut yoghurt.
