Magic Mousse Jars

This dessert is such a winner! Not only is it visually stunning it’s deceptively easy to make. Unlike a traditional mousse made using eggs, cream and sugar this magic mousse is 100% vegan and is made using avocado, silken tofu and coconut yoghurt as the base. Stay with me! I know this combination of ingredients aren’t obvious choices for a dessert but when they are blended with rich melted dark chocolate, smooth salty peanut butter and juicy raspberries they transform into the most deliciously decadent mousse. The really fun part is the layers. Each mousse is individually layered in a jar then topped off with more raspberries, shavings of chocolate and cacao nibs. So each time you dip your spoon in you get a different combination of flavours and textures. Choc Cherry Power Bars

If you looking for an easy sweet treat to make then these are the bars for you! They are essentially a raw ball but pressed into a bar shape. You simply blend everything together and then let the bars firm up in the freezer then drizzle with dark chocolate. I know they sound insanely delicious! I’ve given the classic choc cherry flavour combo a healthy twist and used raw cacao and sour dried cherries instead. the cacao makes these bars taste really indulgent. They are packed out with almonds, hazelnuts and oats so you get all of your good fats, protein and fibre, which also makes them the perfect sweet snack for after a workout. I love to whip up a big batch of these and them store in the freezer so I have a healthy snack on hand when I get a sweet craving. Strawberry & Pistachio Crumble

Crumble has always been a favourite of mine.  My mum used to make an apple crumble most Sundays and would serve it with a big dollop of ice cream. It was such a treat. Crumbles are the perfect combination of flavours and textures. Sweet stewed fruit topped with a golden nutty crumble. The best bit is the layer in between where the crumble topping soaks up the juices from the fruit and becomes gooey and decadent. This recipe is a lighter version using fresh summer strawberries tossed in cinnamon, lime and maple syrup then topped with a mix of rolled oats, pistachios and shredded coconut. The bright colours and fresh flavours make it the perfect dish to celebrate the warmer weather. We’re pretty lucky here in Perth with the warm climate, the strawberry season has stretched on forever.
